Clean and cut bitter gourd by removing the seeds in the middle cavity.
Soak tamarind in hot water.
In a pan add some oil, roast 1 tbsp coriander seeds and 1-2 red chilli for about 2-3 min.
Add a cup of coconut, curry leaves and 2 chopped small onion and roast till it changes brown in colour.
Cool it down and grind to a smooth paste by adding enough water.
In a pan, add oil, when hot enough splutter a tsp of mustard, urad dal and ½ tsp of fenugreek and curry leaves. Add chopped onion and 2 garlic cloves. Saute till onion is cooked.
Add chopped bitter gourd and 2 green chilli and mix properly for about 3-4 min.
Add ½ tsp of turmeric powder and salt and allow it to cook for nearly 20 min. Make sure to stir in between.
Now add tamarind concentrate along with ½ cup water and let it boil for about 10 min.
Transfer the grinded coconut mixture and ½ cup water and allow it to boil. Adjust salt.
Bitter Gourd curry is ready to be served with rice.
