Chop ashgourd into very thin squares.
Crush 1 cup coconut along with 2 green chilli, 7 cloves garlic, curry leaves and turmeric powder. No need to add water.
In a pan add oil, when hot enough splutter mustard, urad dal, curry leaves and red chilli.
Add crushed coconut mix and saute for 2-3 min.
Now add chopped ash gourd and salt.
Cover and cook in medium flame till its done for about 10-15 min. Make sure to mix in between. There is enough water content in ash gourd, so need to add water to cook. It will cook in its own steam.
Serve it as a side dish for lunch.
