Clean green gram by removing all the debris, wash and soak in water overnight. Drain off water the next day morning. Keep it covered and you will see sprouts coming up by end of day or next morning.
In a pan add oil, when hot enough splutter mustard, curry leaves, 1 chopped onion and green chilli. (optionally you can add a piece of ginger too)
After sauteing for about 2-3 min, add washed sprouted green gram, turmeric powder and salt.
Add ¼ cup of water, cover and cook for nearly 15 min till its done.
When green gram is done, add fresh coconut.
Saute for about a minute and switch off the flame. Cover and keep for about 5 min.
Green gram stir-fry / sundal is ready to be served.
