Chop Okra thinly and evenly. This ensures even and fast cooking.
In a kadai, add oil and splutter mustard seeds. add curry leaves, onions and green chilli.
After sauting for about 2-3 min, add okra and saute gently in low flame. Do not mix it too often.
When Okra is half done (when the stickiness is reduced), add salt, turmeric powder and 1 tsp sambar powder.
Saute till it reaches your desired crispy consistency. Add oil if required and saute.
Serve with rice or chapathi.
