In oil splutter mustard, urad dal.
To it add a chopped onion, ginger, 1 green chilli and curry leaves. Saute for 2-3 min.
Now add chopped/grated carrot, coriander leaves and saute for 3-5 min. Switch off flame.
When cooled down, transfer the mix to dosa batter, salt and mix well.
Keep Kuzhi paniyaram pan on flame and add some oil in all the cavities. When its hot enough, start pouring the batter using a spoon till ¾ full.
Drizzle some oil around the cavities.
Cover and cook for 3-4 min.
Carefully flip over all the paniyarams and spray some oil.
After 3-4 min, check with a tooth pick if its cooked in the middle. If it comes out clean after pricking in the center part, then its cooked and ready to transfer.
Serve hot with sambar and chutney.
