Wash and Soak Fenugreek overnight. Drain the water by morning and keep it covered or wrapped in muslin cloth. You can see sprouts appearing from it the next morning.
In a pan add coconut oil, mustard and washed sprouted fenugreek. We generally wash the sprouted fenugreek to reduce the bitterness in it.
Add Turmeric powder, Chilli powder, salt and a small piece of kudampuli. (or any tamarind you have.)
Saute it and add little water for fenugreek to get done, for about 10 min.
When its almost done, add coconut and check the taste. If its bitter add more chilli powder. But the bitterness will gradually reduce after some time.
Ready to serve with rice.
