Brinjal Tamarind Curry
Brinjal tamarind curry is a famous south Indian recipe, made on weekly or bi-weekly basis. It is a good antioxidant, rich in fiber, potassium (which helps in maintaining blood pressure), folate, iron, maintains cholesterol and relieves constipation. Most of the south Indian recipes are prepared using tamarind. It contains lots of curative properties and even used in ayurveda medicines. There are different recipes which can be made using this combo; Brinjal tamarind curry is one among them.
Ingredients
- 8 Brinjal/Eggplant
- 7-8 Garlic
- 7-8 Small Onion
- Tamarind (Big gooseberry sized)
- 2 tsp All purpose Chilli Powder (Kuzhambu milagai powder)
- ¼ tsp Turmeric powder
- Curry leaves
- Gingelly oil
Instructions
- Slice brinjal and put in water to avoid darkening.
- Wash and soak tamarind in hot water. After a while squeeze and take the extract from it.
- In a cooker, add oil, splutter mustard, few fenugreek and add curry leaves, small onion and garlic.
- After sauteing for a few minutes, add sliced brinjal.
- Mix it well. When brinjal starts to wilt, add salt, ¼tsp turmeric powder, 2 tsp All purpose Chilli Powder (Kuzhambu milagai powder) and mix well.
- Pour tamarind extract water along with half cup of water and keep it for a whistle in cooker.
- Adjust salt and chilli powder according to your palate.
- Serves good with rice and chapathi.
