Okra Roast

Okra is a good source of Vitamins, Minerals, Fiber, Iron, Folate and Phosphorus. It is also believed to be a good antioxidant. It helps in developing strong bones due to Vitamin K present in it. Also it improves eye sight, stabilizes blood sugar, improves memory etc. It contains folate, which is why okra is recommended for pregnant women for proper child development. It is rich in nutrients and low in calories, thereby managing body weight.
Okra is one of the vegetable which can be prepared in a weekly rotational basis. Okra plant grows easily in tropical areas and during summer season in cold countries. Make sure to plant this vegetable, and enjoy the regular yield from your kitchen garden.

Ingredients
  

  • 1 Onion (Chopped)
  • 10-15 Okra
  • 2 Green Chilli (Sliced)
  • 1 tsp Sambar powder
  • ¼ tsp Turmeric powder
  • Curry Leaves

Instructions
 

  • Chop Okra thinly and evenly. This ensures even and fast cooking.
  • In a kadai, add oil and splutter mustard seeds. add curry leaves, onions and green chilli.
  • After sauting for about 2-3 min, add okra and saute gently in low flame. Do not mix it too often.
  • When Okra is half done (when the stickiness is reduced), add salt, turmeric powder and 1 tsp sambar powder.
  • Saute till it reaches your desired crispy consistency. Add oil if required and saute.
  • Serve with rice or chapathi.
