Cabbage Roast

Cabbage, Cauliflower, Kale, Brussel Sprouts are commonly termed as Cruciferous Vegetables. These group of vegetables are rich in Vitamins, Minerals and Phytonutrients. Phytonutrients is a plant based compound believed to prevent the risk of developing cancer. Since cabbage is rich in fiber, it aids in weight loss. While green cabbage is the commonly consumed variety, red-purple cabbage has the most nutritional benefits.

Ingredients
  

  • 2 Cup Cabbage (chopped)
  • 1 Onion
  • 2 Green chilli (sliced)
  • 1 Red Chilli
  • 1-2 tbsp Chana Dal
  • ½ tsp Turmeric Powder
  • Curry Leaves
  • Coconut Oil

Instructions
 

  • Cabbage needs to be cleaned properly. Chop cabbage finely and immerse in warm water with salt and turmeric powder for about 30 min.
  • Drain the water and wash it properly using a colander. Set it aside for the water to drain completely.
  • In a pan, add coconut oil, mustard, curry leaves, red chilli and chana dal. (Adding chana dal is optional)
  • Add onion and green chilli and give it a saute for about 2 min.
  • Add cabbage with little turmeric powder and salt. Both onion and cabbage can cook together.
  • Saute it and cover it with a lid. Let it get done in its own steam. no need to add water. Saute in between.
  • Cabbage roast will be ready in 10-15 min. You can also add some fresh coconut and serve.
