Malabar Cucumber Curry

Malabar cucumber is also known as Madras cucumber/Sambar Cucumber/Mangalore cucumber across different parts. It’s made up of nearly 85-95% water and rich in Vit C, A, K, calcium, potassium, proteins, minerals, dietary fiber and antioxidants.
Cucumber helps in weight loss, prevents constipation, maintains healthy skin, delays ageing and the list goes on. There are ample number of recipes prepared using malabar cucumber from different cultures and cuisines. Adapt whichever recipes suits you, but make a point to introduce it in your food chart every week.

Ingredients
  

  • 2 Cups Cucumber
  • ¼ Cup Raw Mango
  • 1 Cup Coconut
  • 1-2 nos Green Chilli
  • 1 " Ginger
  • ½ tsp Cumin
  • 2 tsp All purpose Chilli Powder (Kuzhambu milagai powder)
  • ¼ tsp Turmeric Powder

For Garnishing

  • ½ tsp Mustard
  • ¼ tsp Fenugreek
  • 1-2 Red chilli
  • 3-4 Small onion
  • Curry leaves

Instructions
 

  • Chop cucumber and raw mango into medium big chunks.
  • Grind 1 cup coconut with ½ tsp cumin, 2 tsp All purpose Chilli Powder, ¼ tsp turmeric powder to a smooth paste by adding enough water.
  • Transfer chopped cucumber, raw mango, sliced green chilli, crushed ginger, turmeric powder and salt to a cooker. Add 1 cup of water and keep it for a whistle.
  • When cooled down, open the cooker and add grinded coconut mixture along with ¼ cup water.
  • Give it a nice boil.
  • In another pan, add oil, splutter mustard, fenugreek, red chilli, small onion and curry leaves.
  • Pour into the gravy, and cucumber curry is ready to be served with rice.
