Steamed Wheat Dumpling/ Kozhukattai

Steamed wheat dumpling or commonly called as kozhukattai is a healthy midday snack or an evening snack. If it's prepared using whole wheat or any whole grain, you can always reap the benefits of whole grain from it, rather than from refined flour available. Also steam cooking ensures all the nutritive values are retained to it; makes the food tender, maintains its fiber and makes it easy to digest.
Steamed Dumplings or kozhukattai are very easy to prepare and compliments as a healthy appetizer too. Ensure to always prepare it using palm jaggery or jaggery rather than white sugar.
Kozhukattai can be made relatively from all kinds of food grains, most commonly used is rice flour. Either prepare as sweet or savoury depending upon your taste buds and cravings and have a healthy snack..

Ingredients
  

  • 1 Cup Wheat flour (roasted and grinded)
  • ½-¾ Cup Jaggery Powder
  • ½ Cup Coconut
  • 3 tbsp Water

How to prepare Roasted Wheat Flour for the dumpling

  • Dry roast whole wheat in small batches in a heavy bottomed pan.
  • Roast till it changes colour and starts popping up.
  • Transfer to a plate and cool it down.
  • Grind it in a mixie/blender along with a pinch of dry ginger powder and cardamom powder to a fine smooth flour. Store this flour for weeks in a air tight container and can be used instantly for preparing the steamed dumpling.
  • In alternate to Whole wheat :
    If you are not able to source whole wheat, just dry roast wheat flour and use it to prepare dumpling

How to prepare Steamed Dumpling

  • Add 1 cup roasted and grinded wheat flour, ½ cup coconut and ½ cup jaggery. (Jaggery can be melted and filtered before adding if there are any impurities) into a mixing bowl.
  • Mix it properly using hands by breaking down jaggery lumps if any.
  • Sprinkle 3 tbsp water little by little and mix it properly and evenly
  • Hold some portion of flour in your hand and press it firmly into a oblong shaped dumpling
  • Place it in a idli plate or any steamer.
  • Steam for about 15-20 min in medium flame.
  • Enjoy it as a healthy evening snack.

Notes

In alternate to Whole wheat :
If you are not able to source whole wheat, just dry roast wheat flour and use it to prepare dumpling
