Tender Jackfruit Stir Fry
Jackfruit-a superfood, is a tropical fruit, native to south India. It’s a versatile fruit which can be consumed in many ways, either raw or cooked, depending upon its ripeness. It can be enjoyed as a fruit, or in curries, halwa, sweet pudding, chips, ice-cream, squash and the list goes on. Almost all part of the fruit is edible except outer spiky green skin (which is used as cattle feed).Jackfruit is very nutritious, rich in phytonutrients and has antioxidant properties which make it an immunity booster. Rich in fiber, vitamin A,C, riboflavin, niacin, thiamine, folate, calcium, iron, potassium, zinc, magnesium etc. Since it’s loaded with dietary fiber, it prevents constipation and colon cancer. Vit A present in it helps in maintaining eye health. High calcium helps in building stronger bones, potassium helps in regulating blood pressure. Tender/unripe jackfruit is low in glycemic index and calories, compared to ripened sweet jackfruit, hence suggested for diabetic patients.Jackfruit is the only fruit which comes in its natural form free from all pesticides and chemicals. However it was not given much importance until recent times. This recipe is prepared using tender/unripe fruit. The more tender, the more tastier and healthier.
Ingredients
- 1 Tender Jackfruit
- ½ cup Garlic
- 1 cup Small Onion
- 4-6 Red chilli
- 1 tbsp Raw rice
- 1.5 cup Coconut
- ¼ tsp Turmeric powder
- Curry leaves
- Coconut oil
Instructions
- This recipe is done using tender jackfruit. Cut it into chunks and peel off outer green spiky skin. Make sure to grease your knife and hands with oil before cutting due to the stickiness of the latex from the fruit.
- The next step is to remove the center core or the stalk. Be careful while cutting as greased knife and hands tends to be slippery.
- Now, the center portion being removed, cut jackfruit into chunks.
- The next step is to cook jackfruit chunks. This can be either pressure cooked or pan cooked. Depending upon the tenderness of the jackfruit, the cooking time varies. Transfer jackfruit chunks to a big vessel and pour enough water to submerge. Add turmeric powder and keep it to boil.
- If Pressure cooking, keep it for 2-3 whistles. If pan cooking, cover and cook for nearly 15-30 minutes. Cooking time varies depending upon the tenderness of the fruit. The more tender, the less cooking time and more tastier.
- When its cooked, drain the water and smash jackfruit chunks using a smasher or mortar and pestle. This has to be done when its hot enough.
- This is how it looks after smashing, similar to shredded meat.
- Peel pearl onion, garlic and keep it ready.
- First grind red chilli in mixie to a coarse texture.
- Add small onion and garlic to the grinded mix and give it a pulse or two.
- In a kadai, add coconut oil, mustard and a tbsp of raw rice. Saute.(Raw rice when fried, turns crispier and feels good to bite in between)
- When rice is puffed, add grinded onion garlic mix and curry leaves. Saute till its cooked and onion turns brown.
- At this stage add 1.5 cup of coconut and ¼ tsp turmeric powder and saute for 2-3 min.
- Add Tender jackfruit and salt and mix well for 5 minutes.
- Tender Jackfruit stir fry is ready to be served with rice.
Notes
This recipe tastes good with Bird’s eye chilli than red chilli. Replace with it if available.
