Ash Gourd Roast

Ash Gourd, also known as Winter Melon contains 96% of water in it. Having water rich vegetables and fruits cools down our body.

Ingredients
  

  • 1 Cup Ash Gourd (chopped)
  • 1 Onion (chopped)
  • 1-2 Green chilli (sliced)
  • 1 tbsp Chana dal
  • 1 tsp Cumin seeds
  • ½ tsp Turmeric powder
  • Coconut oil
  • Salt
  • Curry leaves

Instructions
 

  • In a kadai, add oil, splutter mustard seeds, cumin and chana dal.
  • Add curry leaves, onion and green chilli. Saute it until the onion turns transparent.
  • Add chopped Ashgourd and saute.
  • After sauting for a minute or two, add salt and turmeric powder.
  • Cook it covered for about 10-15 min until it is done by sauteing in between. No need to add water, it will get cooked from its own steam.
  • Serve it with rice.
