Pumpkin Curry

Pumpkin contains Vit A, C, which increases immunity and beta carotene present in it acts as anti inflammatory, improves eye health and skin health, is good in fiber and helps in weight loss. 90% of pumpkin contains water which is good for hydration and body health. It is also an antioxidant, protects eyesight, skin health and also improves heart health.
There are a variety of amazing dishes that can be prepared with pumpkin. Be it pumpkin soup, as a vegetable, curry, halwa, cutlet etc. It is a versatile vegetable and easy to incorporate in variety of dishes.

Ingredients
  

  • Cup Pumpkin (chopped)
  • ¼ tsp Turmeric powder
  • Salt
  • Mustard
  • Curry leaves

To Roast and Grind

  • ¼ Cup Coconut
  • tbsp Urad Dal
  • 1 tbsp Coriander Seeds
  • 4 Red Chillies
  • ¼ tsp Hing powder (Asafoetida)

Instructions
 

  • Dry roast ¼ cup coconut, 1½ tbsp urad dal, 1 tsp coriander seeds, 4 red chilli and asafoetida in a low flame.
  • Roast till coconut changes to brown in colour. Switch off and let it cool down,
  • Grind to a slight smooth powder without adding water.
  • Scrape off the pumpkin skin and chop it into medium cubes.
  • Transfer it into a pan, add a cup of water, turmeric powder and salt.
  • Cover and cook till it becomes tender.
  • Now add the grinded coconut mix.
  • Stir it and give it a boil. Check for salt.
  • Temper with mustard and curry leaves. Pumpkin Curry ready to be served with rice or chapathi.
