Cauliflower Curry

Cauliflower is rich in Vit C, K, Fiber and Folate and a good antioxidant. Cauliflower is well consumed by either steaming or stir frying rather than boiling or blanching to protect the nutrients in it. Cauliflower deserves a regular rotation in your diet due to the nutrient value attached to it.
This is a tasty recipe made with coconut milk. Try this out with Bread or rice.

Ingredients
  

  • 2 Cup Cauliflower Florets
  • 1 Onion
  • 1 Cup Coconut milk
  • 1 tsp Fennel Seeds
  • ¾-1 tbsp All purpose chilli powder (Kulambu milagai powder)
  • ¼ tsp Turmeric powder
  • Oil

Instructions
 

  • Cut cauliflower florets and soak it in warm water with turmeric powder and salt. After 30 min drain it using a colander and wash in running water. Let it drain.
  • In a pan add oil, mustard and fennel seeds.
  • After a saute, add onions and saute for about 2 minutes.
  • Add the washed cauliflower florets. Saute it in a low flame, covered till it cooks. No need to add water, it will cook in its own steam.
  • When cauliflower is cooked, add 1 tbsp all purpose chilli powder (kulambu milagai powder), turmeric powder and salt.
  • Add coconut milk and let it boil.
  • Switch off when it starts to boil, and let it stay covered for some time.
  • Serve with Rice or with Bread.
