Cauliflower Curry
Cauliflower is rich in Vit C, K, Fiber and Folate and a good antioxidant. Cauliflower is well consumed by either steaming or stir frying rather than boiling or blanching to protect the nutrients in it. Cauliflower deserves a regular rotation in your diet due to the nutrient value attached to it. This is a tasty recipe made with coconut milk. Try this out with Bread or rice.
Ingredients
- 2 Cup Cauliflower Florets
- 1 Onion
- 1 Cup Coconut milk
- 1 tsp Fennel Seeds
- ¾-1 tbsp All purpose chilli powder (Kulambu milagai powder)
- ¼ tsp Turmeric powder
- Oil
Instructions
- Cut cauliflower florets and soak it in warm water with turmeric powder and salt. After 30 min drain it using a colander and wash in running water. Let it drain.
- In a pan add oil, mustard and fennel seeds.
- After a saute, add onions and saute for about 2 minutes.
- Add the washed cauliflower florets. Saute it in a low flame, covered till it cooks. No need to add water, it will cook in its own steam.
- When cauliflower is cooked, add 1 tbsp all purpose chilli powder (kulambu milagai powder), turmeric powder and salt.
- Add coconut milk and let it boil.
- Switch off when it starts to boil, and let it stay covered for some time.
- Serve with Rice or with Bread.
