Cauliflower Curry

Cauliflower is rich in Vit C, K, Fiber and Folate and a good antioxidant. Cauliflower is well consumed by either steaming or stir frying rather than boiling or blanching to protect the nutrients in it. Cauliflower deserves a regular rotation in your diet due to the nutrient value attached to it.
This is a tasty recipe made with coconut milk. Try this out with Bread or rice.

Ingredients
  

  • 2 Cup Cauliflower Florets
  • 1 Onion
  • 1 Cup Coconut milk
  • 1 tsp Fennel Seeds
  • ¾-1 tbsp All purpose chilli powder (Kulambu milagai powder)
  • ¼ tsp Turmeric powder
  • Oil

Method
 

  1. Cut cauliflower florets and soak it in warm water with turmeric powder and salt. After 30 min drain it using a colander and wash in running water. Let it drain.
  2. In a pan add oil, mustard and fennel seeds.
  3. After a saute, add onions and saute for about 2 minutes.
  4. Add the washed cauliflower florets. Saute it in a low flame, covered till it cooks. No need to add water, it will cook in its own steam.
  5. When cauliflower is cooked, add 1 tbsp all purpose chilli powder (kulambu milagai powder), turmeric powder and salt.
  6. Add coconut milk and let it boil.
  7. Switch off when it starts to boil, and let it stay covered for some time.
  8. Serve with Rice or with Bread.
