Cauliflower Roast

Cauliflower is a detoxifier; rich in Fiber, Vit C, K and Folate. The plant based nutrients in it act as a good anti oxidant making Cauliflower one of the vegetable you can keep on a weekly rotation basis. Also happened to read a article which says Cauliflower has cancer fighting properties. But make sure you steam or stir fry rather than boil or blanch to protect the nutrients in it.

Ingredients
  

  • 2 cups Cauliflower florets
  • 1 Onion chopped
  • ½ tsp Turmeric powder
  • 1-2 tsp Chilli powder
  • Salt
  • Oil

Instructions
 

  • Wash cauliflower florets by immersing them in warm water with salt and turmeric powder. Drain the water after 30 min and clean them with fresh running water.
  • In oil add mustard, curry leaves and onion.
  • When onion is half done, add washed Cauliflower florets and saute.
  • Add salt and turmeric powder and saute in a low flame (Don't add water)
  • Close it with a lid and let it get done in its own steam. Keep stirring in between.
  • When its ¾ done, open the lid, add chilli powder and saute.
  • Keep roasting till its done. You can add more oil and keep roasting till you get it crisp if that consistency is required. Add coriander leaves and serve.
  • Healthy Cauliflower Roast is ready to be served with rice or chapathi.
