Chayote/ Chow Chow chutney

Chayote or Chow Chow is used to prepare a variety of dishes across different cultures, either steamed, baked, fried, marinated or boiled. It is a good source of dietary fibers, vitamins, minerals, folate and also a good anti-oxidant. Since it's low in calorie, no fat and high in fiber, it is commonly suggested for weight reduction, controlling cholesterol, blood pressure and prevents constipation.
It is a versatile vegetable and can be used to experiment different kinds of dishes, though most commonly we use it in sambar, kurma, biryani, side-dish, stir-fry, chutney etc. It’s also said that chayote leaves have health benefits and are used to make medicinal tea.

Ingredients
  

  • 1 Chayote/ Chow Chow
  • 1 tsp Cumin seeds
  • 1 tbsp Chana Dal
  • 1 tbsp Urad Dal
  • 1 Red Chilli
  • 1 Green Chilli
  • ¼ tsp Turmeric powder
  • Coriander leaves

Instructions
 

  • Scrape outside skin of chayote and also remove the white seed in the centre. Chop into tiny cubes.
  • In a pan add oil and when hot enough, add 1 tsp cumin seeds, 1 tbsp chana dal, 1 tbsp urad dal and 1 red chilli. Saute for 1-2 min.
  • Add in chopped chayote and 1 sliced green chilli. Saute for 2-3 min.
  • Add ¼ turmeric powder, salt and coriander leaves.
  • Optionally add some mint leaves and chopped karpooravalli/omavalli leaf.
  • If needed add a tbsp of water and cover and cook till its fully done. Mix in between.
  • Allow it to cool and grind into a smooth paste without adding water.
  • Chayote chutney is ready. Temper it with mustard, urad dal and curry leaves. Serve with dosa, idli.

Notes

Add Onions, tomato and coconut along with chayote while sauteing. Its more tastier..
