Drumstick Jackfruit seed Mango cury

Jackfruit seed and mango find its way into many recipes during its season. Drumstick jackfruit seed mango curry is a common recipe in Kerala and also one of the traditional recipes filled with lots of nutrients.The flavour of mango along with drumsticks, prawns and jackfruit seed makes this recipe extra flavourful.
Drumsticks are rich in Calcium, Iron and Vitamins to improve bone health.  It is also called as Super Plant because of its high therapeutic value, and used in Ayurveda. Drumsticks, a blood purifier is known to control blood sugar and improve heart health when consumed on a regular basis.
Jackfruit seeds are rich in iron, dietary fiber, proteins, vitamins, minerals. It is also a great antioxidant and proven to fight against cancer. It improves eyesight, enhances skin complexion, boosts immunity, prevents constipation and helps in digestion related issues.
This recipe is tangy and tastes good with prawns. However you can just skip it for a veg version. If raw mango is not available try with kodampuli (Garcinia cambogia or Malabar tamarind)

Ingredients
  

  • 1.5 cup Jackfruit seed
  • 1 small Raw mango
  • 1-2 Drumstick
  • 1 cup Prawns (optional)
  • 14-15 nos Small onion
  • 2 inch Ginger
  • 1 cup Coconut
  • ¼ tsp Turmeric powder
  • 2.5 tbsp Chilli powder
  • 1 tbsp Coriander Powder

For Garnishing

  • 2-3 Small onion
  • 1 Red chilli
  • ½ tsp Chilli powder
  • Curry leaves
  • Mustard

Instructions
 

  • Cook jackfruit seed with water for a whistle in pressure cooker.
    (Seed will be hard so cook it for a whistle before adding to curry).
  • Peel off the outer white transparent shell, cut into half and keep aside.
  • Grind coconut with little water to a smooth paste.
  • Crush shallots and ginger and keep it ready
  • Clean drumstick and cut into pieces. Adding prawns is optional, you can simply skip it if not desired.
  • In a pan (I prefer claypot while preparing traditional kerala cuisines which further increases the taste) add drumstick, jackfruit seed, prawns, ¼ tsp turmeric pdr, 2.5 tbsp chilli pdr, 1 tbsp coriander pdr.
  • Add 1 cup water. Mix everything, cover and cook till the water reduces.
  • At this stage add raw mango pieces and salt. If you prefer extra tangy add more of raw mango.
  • After about 5 min add crushed onion and sauté for 10min.
  • Add grinded coconut and after a boil switch off.
  • In another pan splutter mustard, small onion, curry leaves, 1 red chilli, ½ tsp chilli pdr and add to the curry mixture. Close and keep till its ready to be served.
  • Goes good with rice.
