Drumstick Mango Curry

This is a famous recipe from Kerala. One of the local favourite recipe when both are in season. Drumstick/Moringa have deep roots in ayurveda due to its medicinal properties. It is also called as Super Plant because of its high therapeutic value. All part of the plant is highly nutritious and delicious. Drumsticks, a blood purifier is known to control blood sugar and improve heart health when consumed on a regular basis. It is rich in Calcium, Iron and Vitamins to improve bone health. Drumstick and its leaves are known to control common cold, improving digestive health, eye vision etc. Make sure to grow this plant in your backyard and to introduce into your diet on a regular basis.

Ingredients
  

  • 3-4 Drumsticks
  • ½ Cup Raw Mango (Sliced)
  • 1 tsp Coriander Powder
  • 1-2 tsp Chilli Powder
  • ½ tsp Turmeric powder

To Grind

  • 2-3 Shallots
  • ½ Cup Grated Coconut
  • ½ tbsp Cumin Seeds

To Temper

  • Mustard
  • Curry Leaves
  • Small Onion

Instructions
 

  • Cut Drumsticks and boil them with water (just to immerse in it) with Turmeric powder, Coriander powder and Chilli powder
  • Meanwhile grind Coconut, shallots and cumin seeds coarsely with little water and keep it aside.
  • When Drumsticks are half done, add sliced raw mango pieces and salt.
  • Add grinded coconut paste and allow it to be cooked further.
  • For Tempering, In a pan add coconut oil, mustard, curry leaves, small onion and saute till onion turns transparent and crisp.
  • When drumsticks are done, add the tempered ingredients to curry and serve.
