Drumstick (Moringa) Leaves Stir-Fry
The health benefits of drumstick have been known for generations and widely used in herbal medicines. Drumstick/moringa leaves are even available in capsule or powdered form as dietary supplements. It is an excellent source of Iron, vitamins, minerals, proteins, calcium, and phosphorus. Also an antioxidant, anti-inflammatory, lowers cholesterol, blood sugar, detoxifier, antiseptic and helps treat digestive disorders. Due to all these properties it is referred to as Super food. Make it a point to grow drumstick plant in your yard and reap the benefits organically, as every part of the tree has its own super health benefits.
Ingredients
- 2 Cup Drumstick Leaves
- ¼ Cup Onion
- ¼ Cup Coconut
- ¼ tsp Turmeric powder
- 1 Green Chilli
- Mustard
- Urad dal
- Curry Leaves
Instructions
- Clean drumstick leaves from their stems and wash it.
- Pressure cook cleaned drumstick leaves with turmeric powder, salt and ¼ cup water.
- Drumstick leaves needs time to cook, compared to other spinach's. so pressure cook it for 2-3 whistles
- In a pan heat oil, splutter mustard, urad dal, curry leaves, green chilli and saute onion.
- Add cooked drumstick leaves to it.
- Cover and cook for another 10 min till water dries out (if there happens to be any)
- Add coconut and mix.
- Serve along rice as side dish.
