Egg Curry

Eggs are a very good source of protein. Rich in Vitamin, Minerals and Iron. Eggs are found to be a good source of nutrients in growth and development chapter of kids, therefore advised to give one egg daily. Eggs contain all the essential nutrients we need to maintain our balanced diet.
There are different ways to incorporate eggs in your diet. Egg curry is a simple and quick recipe which you can make on a lazy day since the process is simple.
Try to select good variety of organic eggs, preferably from your nearby local farm, so as to enjoy egg and its nutrient as it is naturally.

Ingredients
  

  • 2 Eggs
  • 1 Onion (Big)
  • 1 Cup Coconut Milk
  • 1 tbsp All purpose Chilli Powder (Kuzhambu milagai powder)
  • ¼ tsp Turmeric powder

Instructions
 

  • In a pan add oil and saute onions.
  • When onion turns transparent add salt, turmeric powder and All purpose Chilli Powder (Kuzhambu milagai powder). Saute for 5min.
  • Add 1 cup of coconut milk.
  • Check for salt and spicy level and bring it to boil.
  • Break eggs and pour into the curry.
  • Cover and cook for about 10 min in medium flame.
  • Open lid and flip over the eggs for it to cook on the other side.
  • Cover and cook for another 5-7 min. Serve it with Rice or dosa.
