Murukku

Murukku is a traditional snack recipe, no festival season is complete without making it. Prepared using rice flour and urad dal flour, murukku is a deep fried crispy snack and there are many versions of it, with different lentil flours. Since it can be stored and consumed for weeks, it is packed for long trips or gifting while visiting friends house. It is a healthy and light snack and can be crunched mid day for craving the huger pangs, or an excellent tea time combo. It is also healthy for kids and adults and also be packed for snack time. Since it is easy to make and need only minimal ingredients, this is the snack which you find in the pantry in most of the South Indian household.

  • 1 Cup Urad dal flour
  • 4 Cup Rice flour
  • tbsp Butter
  • 1 tbsp Cumin Seeds
  • 1 tbsp Sesame seeds
  • Salt

How To Prepare Urad Dal Flour

  • Dry roast urad dal on a medium flame in a wide pan.
  • Roast until you get a good aroma and it starts changing colour. Do not roast till it changes colour or it may result in murukku becoming browner.
  • Once it cools, grind it smoothly in a blender and store air tight.

How To Prepare Murukku

  • Sieve 1 cup Urad dal flour and 4 cup rice flour and remove any coarse particles.
  • Warm up the butter in a low flame till it melts.
  • Wash 1 tbsp sesame seeds and 1 tbsp cumin seeds in clean water in a sieve. This is done to prevent dry ingredients from bursting in the oil.
  • In a mixing bowl, combine 1 cup urad dal flour, 4 cup rice flour, sesame and cumin seeds, melted butter and salt.
  • Mix into a nice soft dough by adding needed water. The dough should be more softer than chapathi dough.
  • Transfer dough to a presser using murukku sieve and press it to a spatula.
  • When oil is hot enough, transfer the pressed dough to the oil.

  • Make sure the flame is on medium for even cooking.
  • Carefully flip it over.
  • When its done drain the oil and transfer to tissue paper.
  • When its cooled, transfer to a air tight container and store. Enjoy as a tea time snack.
