Prawns Fried Rice

This is an easy go recipe loaded with vegetables and meat of your choice. A healthy meal to pack for lunch and travel.

Ingredients
  

  • 1 Cup Basmati Rice
  • 1 Onion
  • ½ Cup Carrot
  • ½ Cup Beans
  • ½ Cup Green Peas
  • ¼ Cup Capsicum
  • 10-12 Prawns
  • 1 tbsp Garlic (chopped)
  • 1 tsp Soy Sauce
  • Spring Onions
  • Salt
  • Pepper

Instructions
 

  • First, cook Basmati rice. For that, rinse rice thoroughly and add it to boiling water. Add a tsp of oil and let it cook. when its ¾done, drain the rice.
  • Fine chop all the vegetables. Boil green peas till it gets cooked, or else you can microwave it with water for 2-3 min. Cook prawns with salt and keep it aside. Also scramble eggs with salt and pepper and keep it aside.
  • In a wide pan, add oil followed by chopped garlic.
  • Add Onions and saute it for about 5 min.
  • Add all the vegetables. Carrot, Beans, Capsicum and Green Peas. Saute it till its about ¾cooked.
  • When done, add salt and pepper powder and Soy sauce. Saute it.
  • Add scrambled eggs, cooked prawns and chopped spring onions and give it a nice saute.
  • Next, add cooked rice and mix well.
  • Adjust salt and pepper according to your palate.
  • Tasty delicious Prawns Fried rice is ready to go..

Notes

You can also add shredded chicken for mixed fried rice recipe. Or else eliminate Chicken and prawns for vegetable version. Soy sauce is optional.
