Tomato Soup
Tomato- a fruit disguised as a veggie is a powerhouse of nutrients. A versatile fruit used almost daily in all forms of foods. Tomatoes are a good source of Vitamins and potassium. Vit A present in it supports immunity, skin health and vision; Vit K is good for bones and potassium maintains a healthy blood pressure and fluid balance. Lycopene present in it is what gives the tomato its red colour. Its said lycopene has anti-carcinogenic properties i.e., it is reported to control the growth of cancer cells. It is a good source of fiber, maintains skin health, safeguard vision, protects heart health, brings down LDL (Bad) cholesterol, has anti-oxidant and anti-inflammatory properties.Tomato Soup is a very simple recipe, made by utilising tomato as a whole without discarding the strained pulp, so its nutrients are well preserved. Enjoy it as a good rainy day soup to warm yourself..
Ingredients
- 2 Tomatoes (Big)
- 2 Small Onion
- 2 Garlic
- Coriander Leaves
- Curry Leaves
- 1-2 tsp Rasam Powder
- Salt
Instructions
- Roughly chop 2-3 tomatoes, 2 small onion, 2 garlic, some curry leaves and coriander leaves and transfer contents to a cooker.
- Add 1.5 cup water and keep it for 2 whistles.
- Open cooker when heat is released and let it cool down.
- Transfer to a blender when completely cooled, and grind to a smooth texture.
- Pour the grinded mix onto the same cooker or any other pan. If its very thick add some water. Do not add more of water as it may become very diluted and runny. It should be on the thicker side. Add salt and 1-2 tsp of rasam powder. (Rasam powder is nothing but cumin and pepper powder. If you do not have rasam powder, simply add cumin powder and pepper powder.)
- Bring it to boil. Optionally you can add butter too.
- Enjoy hot tomato soup with some snacks.
