Bitter Gourd Curry

True to its name, the bitter flavoured bitter gourd has lots of health benefits and is consumed as food and also as medicine. Claimed to be a super-food, it is a good source of Vit C, Iron, potassium, magnesium, zinc etc.
It is anti inflammatory, antioxidant, antimicrobial and said to strengthen immunity. It is one of the most effective food to manage diabetes, helps in purifying blood, good source of dietary fiber, kills worms in the stomach and keeps digestive system healthy, maintains healthy skin etc.
Bitter gourd is consumed as juice to reap the maximum benefits out of it, which is used for weight reduction and diabetes control.
Bitter gourd is one of the most rejected vegetables from our plate, also very hard to feed it to kids owing to the bitter taste. But sooner or later it's always better to introduce it in our diet to prevent all the modern age health disorders.

Ingredients
  

  • 2 Small sized Bitter Gourd
  • 1 Onion
  • 2 Small onion
  • 1 Cup Coconut
  • 1 tbsp Coriander Seeds
  • 1-2 Red Chilli
  • 2 Green Chilli
  • 2 Cloves Garlic
  • 1 tbsp Tamarind (or 1 tsp tamarind concentrate)
  • 1 tsp Mustard
  • 1 tsp Urad Dal
  • ½ tsp Fenugreek
  • Curry Leaves

Instructions
 

  • Clean and cut bitter gourd by removing the seeds in the middle cavity.
  • Soak tamarind in hot water.
  • In a pan add some oil, roast 1 tbsp coriander seeds and 1-2 red chilli for about 2-3 min.
  • Add a cup of coconut, curry leaves and 2 chopped small onion and roast till it changes brown in colour.
  • Cool it down and grind to a smooth paste by adding enough water.
  • In a pan, add oil, when hot enough splutter a tsp of mustard, urad dal and ½ tsp of fenugreek and curry leaves. Add chopped onion and 2 garlic cloves. Saute till onion is cooked.
  • Add chopped bitter gourd and 2 green chilli and mix properly for about 3-4 min.
  • Add ½ tsp of turmeric powder and salt and allow it to cook for nearly 20 min. Make sure to stir in between.
  • Now add tamarind concentrate along with ½ cup water and let it boil for about 10 min.
  • Transfer the grinded coconut mixture and ½ cup water and allow it to boil. Adjust salt.
  • Bitter Gourd curry is ready to be served with rice.
