Ash-Gourd Stir Fry

Ash Gourd, also known as Winter Melon is a widely celebrated vegetable in the world because of its high nutritional value and contains 96% of water in it. Having water rich vegetables and fruits keeps our body well hydrated.
It is a good source of Vitamins, fiber, iron, Potassium, zinc and has lots of therapeutic properties attached to it. Ingredients
  

  • 2 Cups Ash Gourd (chopped)
  • 1 Cup Coconut
  • 7 Cloves Garlic
  • 1-2 Green Chilli
  • ¼ tsp Turmeric powder
  • 1 tsp Mustard
  • ½ tsp Urad Dal
  • 2 Red Chilli
  • Curry leaves

Instructions
 

  • Chop ashgourd into very thin squares.
  • Crush 1 cup coconut along with 2 green chilli, 7 cloves garlic, curry leaves and turmeric powder. No need to add water.
  • In a pan add oil, when hot enough splutter mustard, urad dal, curry leaves and red chilli.
  • Add crushed coconut mix and saute for 2-3 min.
  • Now add chopped ash gourd and salt.
  • Cover and cook in medium flame till its done for about 10-15 min. Make sure to mix in between. There is enough water content in ash gourd, so need to add water to cook. It will cook in its own steam.
  • Serve it as a side dish for lunch.
