Sprouted Green Gram Stir-Fry / Sundal

Sprouting is always good as it increases the nutrient value and makes it easily digestible and absorbable for the body. Almost all legumes can be sprouted and can be had in salad form.
Green gram is rich in vitamins, minerals, fiber and proteins, has antioxidant and anti-inflammatory properties, lowers bad cholesterol, protects heart, controls diabetes, improves immunity and helps in weight management (since it is rich in fiber). It is said sprouted green gram is low in calories and contains a good amount of antioxidant and amino acids in it.
Sprouted green gram sundal makes a good evening snack for kids as it contains all the essential nutrients. It can be had as such in the morning too. Irrespective of age, sprouting is good for everyone, so make it a goal to make at least a sprout a week and reap all the good benefits out of it.

Ingredients
  

  • 1 Cup Green Gram
  • 1 Onion
  • ½ Cup Coconut
  • 1-2 Green Chilli
  • Mustard
  • Curry leaves
  • ¼ tsp Turmeric Powder

Instructions
 

  • Clean green gram by removing all the debris, wash and soak in water overnight. Drain off water the next day morning. Keep it covered and you will see sprouts coming up by end of day or next morning.
  • In a pan add oil, when hot enough splutter mustard, curry leaves, 1 chopped onion and green chilli. (optionally you can add a piece of ginger too)
  • After sauteing for about 2-3 min, add washed sprouted green gram, turmeric powder and salt.
  • Add ¼ cup of water, cover and cook for nearly 15 min till its done.
  • When green gram is done, add fresh coconut.
  • Saute for about a minute and switch off the flame. Cover and keep for about 5 min.
  • Green gram stir-fry / sundal is ready to be served.
