Bajra Ladoo
Pearl Millet/ Bajra is a widely cultivated crop in India since pre-historic times. It is rich in starch, fiber and protein content which in turn gives more energy to our body and lowers our appetite. There are lots of traditional recipes prepared using bajra, like porridge, ladoo, khichdi, dosa, roti etc.Bajra is gluten free, good source of fiber, proteins, vitamins and minerals. It controls diabetes, protects heart health, helps in weight loss and also acts as a antioxidant.
Ingredients
- 1 Cup Roasted Bajra Flour
- ¾ Cup Jaggery
- ½ Cup Coconut
Instructions
How to prepare Roasted Bajra flour
- Bajra needs to be roasted in small batches for even heating which makes it pop up. For that in a heavy bottomed pan, add little of whole bajra and roast in medium flame.
- Roast till it starts changing colour and starts popping out with a crackling sound.
- It's ok if not the full batch pops out. Just a few is enough.
- Transfer to a plate and let it cool. Repeat the process.
- When its cool enough add a pinch of cardamom and dry ginger powder and grind to a fine powder. Store this mix in a air tight container for months.
To Prepare Bajra Ladoo
- Add 1 cup of roasted and grinded bajra flour, ¾ cup jaggery, ½ cup coconut in a mixing bowl. Mix it evenly.
- Sprinkle some water and gently mix.
- Sprinkle water little by little until the flour looks wet enough.
- To ensure its moisture enough, just hold a small portion in hand and press it firmly. If it hold the shape then its good enough, if its not holding firm, add little bit of water and mix.
- Take a small portion of flour, and press it firmly with your palm and fingers until you get a round texture.
- You can also grease your hand with ghee before pressing ladoo
- Tasty healthy ladoo is ready.
