Sprouted Green gram and Fenugreek Stir-Fry
Sprouting is always good as it increases the nutrient value and makes it easily digestible and absorbable for the body. Almost all legumes can be sprouted. Green gram and Fenugreek sprouts is a very nutrient rich and healthy recipe which very well takes care of our body.Fenugreek, a good antioxidant has been considered as a medicine for generations. It can be had as such or in powdered form or leaves. It helps in lowering blood sugar and cholesterol levels, reduces pain during periods, stimulates lactation in nursing mothers, protects the heart and lots more.Green gram is rich in vitamins, minerals, fiber and proteins, has antioxidant and anti-inflammatory properties, lowers bad cholesterol, protects heart, controls diabetes, improves immunity and helps in weight management (since it is rich in fiber). It is said sprouted green gram is low in calories and contains a good amount of antioxidant and amino acids in it. Make it a goal to make at least a sprout a week and reap all the good benefits out of it.
Ingredients
- ½ Cup Green Gram
- ½ Cup Fenugreek
- ¾ Cup Coconut
- 2 tbsp Red chilli powder
- ¼ tsp Turmeric powder
- Kudampuli/ Gambooge (Malabar Tamarind)
- Mustard
- Curry leaves
Instructions
- Wash and soak ½ cup green gram and ½ cup fenugreek overnight.
- Drain away water the next day and let it to sprout for a day or two. If needed you can also wrap it in muslin cloth.
- In a pan add oil, splutter mustard and curry leaves.
- Add washed sprouted green gram and fenugreek. Mix it. Also add a piece of kudampuli/ gambooge, ¼ tsp turmeric powder, 2 tbsp chilli powder and salt.
- Add ¼ cup water and cover and cook. Add more water if required.
- Let it cook covered for 15-20 min. Stir in between.
- When its done, add coconut and mix. The more coconut, the more tastier. Also adding more coconut and chilli powder reduces the bitterness of fenugreek.
- Serve as a side dish along with rice.
